Sweet or savoury boards?
Can I pick both? I love when a board has a bit of chocolate. But I guess I’d go savoury with a little bit of sweet.
First thing you place on a board?
Always a Brie pinwheel. Hands down.
Prosciutto roses or salami ribbons?
Salami ribbons. They draw the eye in, create some height on the board and incorporate some cheese tacs.
Crackers or fresh bread?
Crackers but on a different platter. It’s own cracker spread. A little tip.
Most underrated board ingredient?
That’s a really good question. I love carmelized pecans.
Most requested tip from your audience?
Always salami styling tips. Prosciutto roses, salami rivers, how-to make salami roses. They are always very interested in salami tips.
Your signature styling mood?
I love bright boards filled with fruits and bright colours. Now that we’re in spring, I love edible flowers. I tend to lean more fruit-forward over incorporating olives or veggies on spreads. Just very bright if that makes sense.
Quick fix when a board feels off?
Always add a spiked kiwi. It always makes it better.
Go-to wow item that always impresses?
The Brie pinwheel. It’s so eye-catching and elevated. You can add a honey draw with a little dipper on it or some fresh fruit.
